Presentation
A soft dessert made from barley “milk,” cornstarch, sugar, vanilla extract, salt, and optional fruit or fruit syrup for garnish.
This barley milk pudding is a lighter version of a classic pudding, and barley milk can offer a nutritious and easily digestible alternative.

Ingredients

• 2 cups of barley “milk”
• 2 tablespoons of cornstarch
• 1/4 cup of sugar or sweetener to taste
• A pinch of salt
• 1 teaspoon of vanilla extract
• Fresh fruit or fruit syrup for garnish (optional)

Preparation

1. In a saucepan, mix the cornstarch with a small amount of barley “milk” to create a smooth mixture.
2. Add the remaining barley “milk” to the saucepan and place it over medium heat.
3. Add sugar and a pinch of salt.
4. Stir continuously to prevent the pudding from sticking to the pot.
5. Bring the mixture to a boil, continuing to stir.
6. Reduce the heat and continue to simmer until the mixture thickens, stirring constantly.
7. Once the pudding has reached the desired consistency, remove it from the heat and add the vanilla extract. Stir well.
8. Pour the pudding into individual bowls or a larger bowl.
9. Allow the pudding to cool to room temperature for a while, then refrigerate for at least a couple of hours or until completely cooled and set.
10. Before serving, garnish with fresh fruit or a light fruit syrup if desired.

Allergens

• Barley: a gluten-containing cereal included in the EU Regulation 1169/2011
• Vanilla: potential reactivity in case of sensitivity to spices

Notes

• Sugar: to be avoided for children with potentially ongoing processes (possible presence of cancer cells).
It should be replaced with a sweetener (e.g., stevia or erythritol) or a fruit concentrate (e.g., date or quince concentrate, etc.).
• “Milk” is a very common term, but legally it can only be used for the mammary secretion of animals. In fact, in 2017, the Court of Justice of the European Union prohibited the use of the term “milk” for plant-based products. Therefore, it is correct to refer to it as a beverage.

Safety / Intended Use

• A product intended for individuals with anorexia/weight loss, mucositis, xerostomia (dry mouth), and dysphagia.
• Not recommended in case of diarrhea.
• The product should be prepared under strict hygienic conditions.
• If intended for children, reduce the size of the ingredients, making them homogeneous.
