A first course rich in ingredients: rice, shallot, celery, Gorgonzola, Parmigiano Reggiano, nutmeg, extra virgin olive oil, vegetable broth, white wine and salt.
Ingredients
1 shallot
2 small, thin celery stalks
60 g of sweet Gorgonzola
40 g of grated Parmigiano Reggiano
Nutmeg
1 l of vegetable broth
1 tablespoon extra virgin olive oil
Fine salt
160 g of rice
50 ml dry white wine
Preparation
Clean the shallot and chop it finely.
Wash the celery stalks and cut them into cubes.
Remove the rind from the Gorgonzola and cut it into pieces.
Place the Parmigiano in a bowl, grate a little nutmeg on top and mix well.
Heat the broth.
In a soup pot put the oil, the shallot and bring it to the fire. Let it brown gently with a pinch of salt.
Raise the heat, add the celery and cook for a couple of minutes, stirring.
Add the rice, toast it for 1 minute, stirring, then moisten with the white wine.
Cook stirring until the wine has evaporated
Add 4-5 ladles of boiling broth
Cook for the type of rice you are using (usually 15-18 minutes).
Continue adding the broth as it is absorbed, stirring occasionally.
One minute before the end of cooking, turn off the heat and add the Gorgonzola and Parmigiano, keeping a little aside for decoration.
Mix until completely combined.
Let it rest for a minute and serve garnished with the reserved Parmigiano and a few celery leaves.
