PRESENTATION
A main course consisting of chicken served with a sauce made from extra virgin olive oil, onion, carrots, and low-fat cheese, topped with grated Gruyère or Parmigiano Reggiano PDO.
INGREDIENTS:
Serves 6
1 whole chicken, about 1.2 kg (2.6 lb)
30 g (about 2 tbsp) extra virgin olive oil
50 g (about ¼ cup) onion
50 g (about ¼ cup) carrots
100 g (about 3.5 oz) fat-free fresh cheese (e.g., cottage-type cheese such as Jocca)
Grated Gruyère or Parmigiano Reggiano PDO, to taste
METOD
Cook all the chicken giblets together with the onion and carrot in 100 ml (about ⅓ cup) of water.
Separately, roast the chicken without adding any fat, either in the oven or on a rotisserie.
Cut the chicken into 6 portions.
Discard the fat released during cooking.
Collect the non-fat juices and combine them with a small portion of the previously prepared broth.
Strain the remaining broth, pressing the giblets to extract all their juices.
Reduce this liquid until it reaches a syrup-like consistency, then add the reserved broth and the low-fat cheese.
Pour this sauce over the chicken pieces arranged in a baking dish.
Sprinkle with grated Gruyère or Parmigiano Reggiano and gratinate in the oven until lightly browned.
