Presentation
A snack made with a pudding prepared from mango, coconut drink, and agar-agar, optionally completed with caramel or coconut cream, coconut chips, macadamia nut, goji berries, and pistachios.
Ingredients
For 1 serving:
- 100 g ripe mango
- 100 ml unsweetened coconut drink
- 1 1/2 g agar-agar
For completion (optional)
- 5 or 10 g caramel cream or coconut cream
- 1 g coconut chips
- 1 macadamia nut
- 1 g goji berries
- 1 g pistachios
Preparation
- Wash and dry the mango.
- Use a smooth-bladed knife to make two cuts, gently touching the large central pit, to obtain two halves and one central slice (the one with the pit).
- Use the tip of the knife to score the pulp of the two halves with cross cuts, first one way, then the other. Gently push the peel upwards so that the mango cubes come out and can be detached.
- Blend the mango cubes with the coconut drink.
- Heat the mixture in a small saucepan.
- Add the agar-agar and bring to a boil for 1 minute.
- Let it cool slightly.
- Pour the mixture into a mold.
- Refrigerate for 2 hours.
- Turn the mango pudding out onto a plate.
- Complete with caramel cream or coconut cream (optional).
- Decorate with coconut chips, crumbled macadamia nut, goji berries, and pistachios.
