Presentation
A first course that has become a classic of Italian cuisine based on rice, saffron, meat broth, butter, veal marrow, onion and grated cheese.
Ingredients
320 g of Carnaroli rice
60 g of grated cheese
60 g butter
20 g veal marrow
1 1/2 liter of meat broth
1 small onion
1 sachet of saffron
Preparation
For the meat broth, set aside a cup of warm broth and infuse the saffron pistils for at least an hour.
In this way, the pistils will release an intense yellow color.
Meanwhile, take the disks with the marrow and, with the help of a knife, extract the marrow and cut it into coarse pieces.
In a large saucepan, melt 30 grams of butter with the marrow, add the finely chopped onion and, over very low heat, let it become transparent.
Add the rice, stir it so that, absorbing the sauce, it becomes shiny. Then bring it halfway through cooking by pouring in a ladle of hot broth when the previous one has been absorbed.
At this point, add the saffron dissolved with one or two tablespoons of warm broth and finish cooking by adding a ladle of broth at a time.
Once the rice is cooked (it will take 15 to 18 minutes), remove from the heat and stir the risotto with the remaining butter and season it with grated cheese.
Cover to let it settle and after a couple of minutes transfer it to the hot serving dish.
Serve the Milanese risotto immediately.
