180 g of whole milk
100 g of muscovado sugar

30 g of Sugar
2 medium egg yolks

Preparation
Place the freezing bowl of the ice cream maker in the freezer well dry for at least a day, covered with a plastic bag.

Stir if necessary.
Leave to cool
Blend until pureed
In a tall bowl, whip the egg yolks with the sugar until frothy.
Add the cold liquid cream and whip everything for two minutes.
Add the pumpkin puree to the mixture and mix until smooth.
Once the ice cream is ready, cover it and let it cool in the refrigerator for at least 6 hours (even 24 hours).
Turn on the ice cream maker and pour in the cold mixture.
Start it and let it work for at least 30 minutes or until the desired consistency is obtained.
Serve the pumpkin ice cream sprinkled with your favorite flavors (crumbled macaroons, cinnamon, chocolate flakes, cocoa glaze…)
