Presentation
A seasonal first course based on rice, cherries, butter, spring onion, white wine, vegetable broth, salt and pecorino cheese
Ingredients
300 g of rice for risotto
100 g butter (50 g for sautéing, 50 g for creaming)
1 spring onion, finely chopped
100 ml white wine
1-1.5 l vegetable broth
400 g of pitted cherries
75 g of grated pecorino cheese
Salt to taste
Preparation
Peel and finely chop the spring onion.
In a large saucepan, pour 50 g of butter, melt it over medium heat, add the chopped spring onion and let it stew until the spring onion is transparent and soft.
Pour in the rice and toast it for a few minutes
Deglaze with white wine and let it evaporate.
Add the broth, a ladle at a time, as the rice has absorbed it. Let the rice cook between 15 and 18 minutes.
Wash the cherries, dry them and remove the stalk and stone.
You will blend half of the cherries, the rest will be divided in half.
Halfway through cooking the rice, add both the chopped cherries and the puree
Continue stirring and adding broth until the rice is cooked to the right point.
Once cooked, turn off the heat, add salt and stir in the remaining butter and grated pecorino cheese.
