A classic ice cream with vanilla-flavored cream served with sour cherries in syrup and biscuits.
Ingredients
For 4 people:
Fresh milk: 450 ml
Yolk: 65 g
Vanilla: 1 bean
Fresh cream: 150 ml
Sugar: 125 g
Vanilla icing sugar: 50 g
Sour cherries in syrup: 250 g
Dry biscuits: 150 g
Preparation
For the cream: combine the egg yolks, or granulated sugar and vanilla icing sugar in a saucepan.
Cut the vanilla bean lengthwise, with the tip of the knife scrape the inside taking all the seeds.
Add the seeds to the egg yolks and the sugar.
Separately, put the empty pod in a saucepan with the milk and heat over medium heat, taking care that it does not boil.
With a whisk, beat the egg yolks with the sugar and vanilla until the mixture becomes fluffy.
Remove the pod from the milk and pour it while still hot over the egg and sugar mixture, continuing to mix.
Bring the mixture to the heat over moderate heat and cook until it reaches a temperature of 83 – 85°C.
Remove the mixture from the heat and try to cool it as quickly as possible by immersing the pot in a bowl full of ice.
When the mixture has cooled, add the cream and stir.
Cover with cling film and let cool in the refrigerator for two hours.
Take the cream from the refrigerator and pour it into the ice cream maker.
Turn on the ice cream maker and leave to stir for 30 – 40 minutes.
Pour the ice cream into a tub alternating it with the sour cherries in syrup and pitted.
Store in the freezer for an hour.
Take the ice cream out of the freezer a few minutes before serving and garnish with more sour cherries and chopped dry biscuits.
