Presentation
A rich and very special ice cream with yerba mate, or simply mate, a plant with a tonic and diuretic effect due to its richness in caffeine, combined with milk, sugar, cream, flour and egg.
The very mild taste can be accompanied by fine, dry biscuits, such as cat’s tongues.
Ingredients
for 6 people:
750 cc of whole milk
175 g of sugar
100 g of whipping cream
1/2 tablespoon sifted flour
3 egg yolks
3 tablespoons yerba mate
Preparation
Boil milk
Add the 3 tablespoons of yerba mate, strain and let cool.
Beat the egg yolks with the sugar and sifted flour until creamy
Put everything in a saucepan and add the milk with the filtered yerba mate a little at a time, stirring constantly.
Cook over low heat, stirring constantly, until it begins to become a little thick, but without boiling.
Remove from heat and allow to cool
Add the cream last.
Put it to cool and stir in the ice cream maker or freeze in the freezer.
