Presentation
A dessert, but also a snack, made from a pudding prepared with apricots, agar agar, and honey, served with a crunchy sugar and sesame topping, and accompanied by yogurt.
Ingredients
For 4 people
- 500 g apricots
- 1 teaspoon agar agar
- 3 tablespoons acacia honey
- 50 g sesame seeds
- 100 g granulated sugar
- 100 g Greek yogurt
- 1 pinch of salt
Preparation
- Wash the apricots thoroughly and remove the pits.
- Cut them into small pieces.
- Cook them in a saucepan for a few minutes with the acacia honey and a pinch of salt.
- As soon as the mixture begins to become liquid, add a heaping teaspoon of agar agar and continue cooking for 10 minutes.
- Once done, transfer the mixture into a deep bowl and blend it.
- Once you have a smooth and homogeneous puree, pour it into pudding molds.
- Let it cool completely at room temperature.
- Once cooled, place the puddings in the refrigerator and allow them to set for at least 2 hours.
- In the meantime, toast the sesame seeds in a pan for 2-3 minutes, stirring constantly.
- As soon as they are golden brown and begin to pop, remove them from the heat and let them cool slightly.
- Pour two tablespoons of water into a small saucepan, add the sugar, and caramelize it over low heat.
- Once the caramel is ready, mix it with the toasted sesame seeds and pour the mixture onto a sheet of parchment paper.
- Cover the sesame seed mixture with another sheet of parchment paper and roll it out with a rolling pin.
- Once you achieve a thickness of about 4 mm, let it cool completely at room temperature until it becomes solid.
- Serve the puddings on individual plates for dessert, garnished with a few teaspoons of yogurt, and accompanied by the sesame brittle.
