Introduction
This porridge, made with donkey milk, a milk similar to human milk and free from the allergenic properties of the proteins found in cow’s milk, is mixed with semolina, spelt, or rice or oat flour, and optionally seasoned according to personal preferences. It is a welcomed first dish, not only for children but also for adults, particularly those undergoing oncology treatments.

- Cook over low heat, stirring for 5 minutes.
- Add hot water if needed.

Allergens
- Donkey Milk: This milk has a composition very similar to human milk. Although it contains the same amount of lactose, it is not as allergenic as cow’s milk, making it more suitable for those with milk sensitivities. However, it still contains an equal amount of lactose.
- Wheat, Spelt, and Oats: These cereals contain gluten, which is included in the EU Regulation 1169/2011.
Notes
For donkey milk, use pasteurized liquid milk or pasteurized freeze-dried donkey milk, reconstituted at 10% (10 g of freeze-dried milk + 90 ml of water), and reconstitute it according to the manufacturer’s instructions.
